I purchased the product to help reduce the time it takes me to mince herbs. With "harder" herbs (sage, rosemary) I noticed immediate results and was very pleased. As for the softer, wetter herbs (basil, cilantro) it was not as successful. It tended to bruise them more (still extracts the oils for flavor), but the wheels tend to grip the herbs and pull them up into the casing. I would have to pull it apart to get all my herbs out of the casing. I drizzle a bit of olive oil, which helps a tad. Honestly, rolling up basil leaves and chopping works just as well. It works, but not a universally as I would like. I'm trying to find alternate applications in my kitchen to find additional success.

This is a lovely mincer. Saves me time from what I used to do, whack at herbs with a knife. Only thing is, extremely tender and soft herbs (dill and chives) have a tendancy to stick to the blades. Just have to watch and make them behave.

OXO usually makes good simple products. This one looked like it ought to be great, but I discovered that it did not cut cleanly on "wet" herbs like basil. The pieces started to juice up and stuck between the blades. It did work well on parsley, but so does a pair of scissors.
